Ribbon Fish Spices

In Iranian waters, there are five species of ribbon fish: Japanese cutlassfish (Trichiurus Lepturus), Pearly hairtail (Trichiurus Auriga), Crested hairtail (Tentoriceps Cristatus), Smallhead hairtail (Eupleurogrammus Muticus), and Longteeth hairtail (Eupleurogrammus Glossodon). Among them, only the Japanese cutlassfish is considered a commercial fish. The other species are regarded as by-catch and lack significant commercial value. Ribbon fish Coughing Locations

Ribbon fish is mainly caught along the coast of the Oman Sea and the Persian Gulf in southern Iran. Additionally, some large ships venture into open seas to catch cutlassfish. Throughout the year, these fish are brought to over 60 fishing docks in the south of Iran. At Medes Food, we have local representatives stationed at commercial ports, ready to welcome fishing fleets upon their arrival.

How Ribbon Fish are Caught?

Using Net

1. Trawling with Nets: This method, carried out by trawlers, yields the highest volume of catch due to its efficiency. However, it also results in decreased quality as it gathers both small and large fish, reducing overall product quality and size, hence leading to lower prices.

2. Bottom Nets: Similar to trawling, bottom nets also face challenges in maintaining quality due to catching various fish species simultaneously, resulting in relatively less harvest compared to trawling.

3. String Nets: These nets are left in the water for an extended period, causing fish to die inside. While this method captures larger fish, the extended duration affects product quality negatively.

Using hook

hooking the ribbon fish

This method involves placing hooks along the coastline. Ribbon fish are attracted to these hooks, especially at night when they surface. The catch from this method comprises the largest and highest quality fish. Since it’s fast-paced, fish caught at night are promptly sent for processing, ensuring freshness and superior quality in the final product.

Processing of Ribbon Fish in Iran

Ribbon Fish Primary Transport

After catching ribbon fish using the mentioned methods, ships and boats dock at Iranian ports. Here, small refrigerator trucks equipped with ice water compartments await to transfer the cargo from the boat compartments to the truck’s saltwater tub compartment. Because ribbon fish are highly sensitive to temperature and pressure, only a small amount of them are submerged in the ice water.
Moreover, to combat the extreme heat, southern ports are equipped with roofed loading docks. ensuring the transfer process takes place in the shade, maintaining the quality of the catch.

Sorting and Packing of Ribbon Fish

Once the trucks carrying the fresh ribbon fish arrive at the nearest processing area, the tubs of ice water are promptly transferred to the factory hall. Sorting and packing procedures are carried out manually to ensure the delicate nature of the fish is preserved. With the help of fifty skilled personnel, approximately 20 tons of fish are packed within 24 hours.
Sorting is primarily based on size, freshness of the meat texture, and the extent of external damage. This meticulous process ensures that appropriate ribbon fish are supplied and packed for export.

Ribbonfish Defects

Since ribbon fish inhabit the natural environment of seas and oceans, they are susceptible to various diseases, including parasitic infections like Camallanus, Plerurus, Capillaria, and Hysterothylacium. These parasites cause significant challenges for ensuring the health and safety of the product and obtaining health certificates. At Medes, our QC team is dedicated to preventing parasite contamination in our products. We strive to ensure that when the fish arrives at our factory, it is free from parasites through rigorous inspection.

When sorting ribbon fish, those with yellow eyes are considered spoiled and placed in lower quality categories. Additionally, cuts, physical damage, or crushing decrease the quality rating. Sorting is done by experienced workers under the supervision of the company’s QC officer.
